SLAYTON - Pelican Cove restaurant and lounge is the latest improvement to the Lake Shetek Lodge since its acquisition by new owners in December.

Robin and Chuck Cessna of Slayton - along with Robin’s cousin, Tami Brink, and her husband, Lance Rogers, of Wilmont - purchased the lodge last year and have been renovating it ever since.

Pelican Cove inhabits the space previously occupied by a three-bedroom suite on the first floor of the east building, which the owners call “the motel.” Almost all of the other rental rooms in this building are single bedrooms. The other building is “the lodge,” and is all two- and three-bedroom suites with living rooms and kitchens. Renovation on the motel is complete, and updates to the rooms in the lodge are ongoing.

“Everybody really likes the place,” Robin Cessna said of Pelican Cove.

The restaurant has a bar, but she said it doesn’t have “bar atmosphere.”

Current menu offerings include a few appetizers, sandwiches and pizzas, as well and chips and salsa and artichoke dip. In a week or two, Pelican Cove will roll out the full menu, which will expand appetizer, sandwich and pizza options and add wraps, flatbreads and salads.

The menu will change in November to accommodate fall/winter produce, then switch back to the spring/summer menu in May.

A prominent menu item is what Cessna calls “beer tails,” a concept she learned while living in Florida. A beer tail is a mug of beer with a flavor shot, mixed with a liquor of the same flavor.

Pelican Cove’s beer comes from Brau Brothers Brewery out of Marshall.

Notable features of the restaurant include walk-up service - making shoes and shirts optional for beach bums - and outdoor seating with fire pits by the lake.

“We have the best view of the lake,” Cessna said.

Pelican Cove will host events in the coming months, such as an Oktoberfest with beers and wines from local brewers. Cessna said people who attend Oktoberfest will receive a special cup for use during the event. If they bring that cup back during the year, they will get a discount at Pelican Cove, effective until the next Oktoberfest.

Cessna has years of experience managing restaurants and said her driving force is customer service.

“To me, it’s all about the people,” she said.

Renovations at Lake Shetek Lodge are slated for completion during winter 2020.
